• 2 ripe bananas
  • 2 large eggs
  • ¼ cup coconut oil
  • 2 cups almond flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 TBSP flax seeds (whole)
  • 2 cups chopped nuts
  • 2 cups rough chopped dried fruits
  1. Set oven to 350 degrees
  2. Lightly grease a standard loaf pan
  3. Mash the bananas well in large mixing bowl. Whisk in eggs and coconut oil until blended well together
  4. Stir in flour, baking powder and salt until smooth
  5. Fold in chopped nuts, whole seeds and chopped fruits until everything is evenly distributed.
  6. Spread the dough evenly into the greased loaf pan
  7. Bake for 40 minutes. This bread does not rise so we recommend testing with a toothpick inserted into the middle, the bread is done baking when the toothpick comes out clean.
  8. Please allow the bread to cool completely before slicing and serving.
